When Life hands you bananas...

...make Banana Nut Bread! it's truly a culinary miracle to take something black and well...rotten-looking and make something scrumptious out of it! And the great thing is...you can mash the bananas and stick 'em in the freezer until you're in the mood for baking! Cream together 1/2 cup shortening and 3/4 cup sugar. Mix in 2 eggs and 1 cup of mashed bananas...usually about 3 little ones.

Add 1/4 cup buttermilk...I love this stuff! Great for cooking, and I even like to drink it - much to my family's dismay! Mix together 2 1/2 cups flour, 1 teaspoon each baking soda and baking powder and 1/2 teaspoon of salt. Mix well with the banana mixture. You can stir in 1/2 cup of chopped nuts at this point if you like...or not!

Pour it in two greased loaf pans. I used three little ones here...great for giving to neighbors and raiding from the freezer! Bake at 350 degrees for 35-45 minutes, depending on the pan size. Cool for 15 minutes, then remove from pans and cool...or eat it warm! Make sure you hide a loaf from your hubs and kids...so you've got something yummy to eat!
